Description

Cheesy French Onion Potato Bake – a rich, cozy, French onion soup-inspired side dish featuring thinly sliced potatoes layered with caramelized onions, herbs, and bubbling cheese. Perfect for holiday feasts and family gatherings.


Ingredients

  • 3 lbs potatoes, thinly sliced
  • 3 large onions, thinly sliced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1 cup beef broth (or vegetable broth for vegetarian)
  • 1 1/2 cups shredded Gruyère or mozzarella
  • 1 cup shredded cheddar
  • Fresh thyme for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet, heat butter and olive oil. Add onions, salt, and pepper; cook on low 20–25 minutes until deeply caramelized.
  3. Stir in thyme and garlic powder; cook 1 minute more.
  4. Spread half the potatoes into the baking dish, season lightly, and add half the onions.
  5. Sprinkle half the cheese on top.
  6. Repeat with remaining potatoes, onions, and cheese.
  7. Slowly pour broth over the casserole.
  8. Cover with foil and bake 35 minutes.
  9. Uncover and bake another 20–25 minutes until golden and bubbly.
  10. Garnish with fresh thyme and serve warm.
