  • 1 ½ lbs beef stew meat, cut into cubes (use halal-certified beef)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 3 potatoes, diced
  • 1 cup mushrooms, halved
  • 3 cups beef broth (halal)
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce (ensure halal or omit if unavailable)
  • 1 tsp dried thyme
  • 1 tsp rosemary
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • 2 tbsp all-purpose flour (optional, for thicker stew)
  • Fresh parsley for garnish

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add beef and brown on all sides, about 5–7 minutes. Remove and set aside.
  2. In the same pot, sauté onion, garlic, carrots, and celery for 4–5 minutes until softened.
  3. Stir in tomato paste, thyme, rosemary, paprika, salt, and pepper. Cook for 1 minute to release flavors.
  4. Add beef back into the pot. Pour in broth and Worcestershire sauce. Stir well.
  5. Bring to a simmer, then cover and cook on low heat for 1 ½ to 2 hours, or until the beef is tender and the flavors have deepened.
  6. In the last 15 minutes, add potatoes and mushrooms. Simmer until vegetables are tender.
  7. If a thicker consistency is desired, whisk flour with a few tablespoons of stew liquid and stir it in. Cook for another 5 minutes.
