- 2 tbsp olive oil
- 1 ½ lbs beef stew meat, cut into cubes (use halal-certified beef)
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 3 potatoes, diced
- 1 cup mushrooms, halved
- 3 cups beef broth (halal)
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce (ensure halal or omit if unavailable)
- 1 tsp dried thyme
- 1 tsp rosemary
- ½ tsp smoked paprika
- Salt and black pepper to taste
- 2 tbsp all-purpose flour (optional, for thicker stew)
- Fresh parsley for garnish
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add beef and brown on all sides, about 5–7 minutes. Remove and set aside.
- In the same pot, sauté onion, garlic, carrots, and celery for 4–5 minutes until softened.
- Stir in tomato paste, thyme, rosemary, paprika, salt, and pepper. Cook for 1 minute to release flavors.
- Add beef back into the pot. Pour in broth and Worcestershire sauce. Stir well.
- Bring to a simmer, then cover and cook on low heat for 1 ½ to 2 hours, or until the beef is tender and the flavors have deepened.
- In the last 15 minutes, add potatoes and mushrooms. Simmer until vegetables are tender.
- If a thicker consistency is desired, whisk flour with a few tablespoons of stew liquid and stir it in. Cook for another 5 minutes.
- Garnish with fresh parsley and serve hot — a magical meal made to warm the soul!

- Halal substitutions: Ensure beef broth and Worcestershire sauce are halal-certified or omit Worcestershire if unavailable.
- For thicker stew, increase flour or simmer longer to reduce more liquid.
