  • 1 red bell pepper, diced

  • 1 ½ cups long-grain rice, rinsed
  • 3 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • ½ tsp ground allspice
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup frozen peas
  • Optional: chopped fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large deep skillet or pan over medium heat.
  2. Season chicken with salt, pepper, paprika, thyme, and allspice. Brown on both sides, then remove and set aside.
  3. In the same pan, sauté onion, bell pepper, and garlic until softened.
  4. Stir in rice and cook for a minute to lightly toast.
  5. Pour in chicken broth and bring to a gentle simmer.
  6. Return chicken to the pan, cover, and cook until rice is tender and chicken is cooked through.
  7. Stir in peas during the last few minutes of cooking.
  8. Garnish with fresh cilantro and serve warm.
