  • ½ lb halal andouille-style turkey sausage, sliced
  • ½ lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 celery stalks, sliced
  • 2 garlic cloves, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 3 cups chicken broth
  • 1 cup corn (fresh or frozen)
  • 1 cup heavy cream
  • 1 tsp Cajun seasoning (more to taste)
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • Salt and black pepper to taste
  • Optional: fresh cilantro
  • Optional: sliced jalapeños
  • Optional: lime wedges

Instructions

  1. Heat olive oil in a large pot over medium heat. Add halal andouille sausage and cook until lightly browned.
  2. Add onion, celery, and garlic; sauté until softened.
  3. Stir in shredded chicken, white beans, green chiles, corn, Cajun seasoning, paprika, cumin, salt, and pepper.
  4. Pour in chicken broth, bring to a simmer, and cook for 10 minutes.
  5. Add shrimp and cook 3–4 minutes until pink and fully cooked.
  6. Stir in heavy cream and simmer 2 more minutes to thicken.
  7. Taste and adjust seasoning. Top with cilantro, jalapeños, or lime wedges if desired.
