Cajun Garlic Chicken Rotini Skillet is a 30-minute, one-pan dinner that delivers creamy, cheesy Cajun flavor in a hurry. Tender chicken, garlicky brightness, and al dente rotini come together in a rich sauce for a weeknight favorite.

- 2 tbsp olive oil
- 1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tsp Cajun seasoning (adjust to taste)
- 1 tsp garlic powder
- Salt and black pepper, to taste
- 3 cloves garlic, minced
- 2 cups cooked rotini pasta
- 1 cup heavy cream (or half-and-half)
- ½ cup chicken broth
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 tbsp chopped parsley (for garnish)
Instructions
- Cook rotini pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season chicken with Cajun seasoning, garlic powder, salt, and pepper.
- Add chicken to the skillet and cook until golden brown and cooked through, about 6–8 minutes. Remove from skillet and set aside.
- In the same skillet, sauté minced garlic for 30 seconds until fragrant. Pour in chicken broth and heavy cream, stirring to combine.
- Reduce heat to low and add cheddar, mozzarella, and Parmesan cheese. Stir until smooth and creamy.
- Return cooked chicken and pasta to the skillet, tossing to coat everything in the sauce.
- Simmer for 2–3 minutes until heated through and the sauce thickens slightly.
- Garnish with chopped parsley and serve warm.
Notes
- One-skillet wonder: You can use the same skillet for the whole dish to save washing up.
- Substitute half-and-half for heavy cream to lighten the dish.
- Adjust Cajun seasoning to taste for milder or spicier results.
- Leftovers keep well in the fridge for up to 3 days.
- For extra color, add a pinch of paprika or red pepper flakes.
