Description

Cajun Garlic Chicken Rotini Skillet is a 30-minute, one-pan dinner that delivers creamy, cheesy Cajun flavor in a hurry. Tender chicken, garlicky brightness, and al dente rotini come together in a rich sauce for a weeknight favorite.


Ingredients

  • 2 tbsp olive oil
  • 1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tsp Cajun seasoning (adjust to taste)
  • 1 tsp garlic powder
  • Salt and black pepper, to taste
  • 3 cloves garlic, minced
  • 2 cups cooked rotini pasta
  • 1 cup heavy cream (or half-and-half)
  • ½ cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped parsley (for garnish)

Instructions

  1. Cook rotini pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with Cajun seasoning, garlic powder, salt, and pepper.
  3. Add chicken to the skillet and cook until golden brown and cooked through, about 6–8 minutes. Remove from skillet and set aside.
  4. In the same skillet, sauté minced garlic for 30 seconds until fragrant. Pour in chicken broth and heavy cream, stirring to combine.
  5. Reduce heat to low and add cheddar, mozzarella, and Parmesan cheese. Stir until smooth and creamy.
  6. Return cooked chicken and pasta to the skillet, tossing to coat everything in the sauce.
  7. Simmer for 2–3 minutes until heated through and the sauce thickens slightly.
  8. Garnish with chopped parsley and serve warm.

Notes

  • One-skillet wonder: You can use the same skillet for the whole dish to save washing up.
  • Substitute half-and-half for heavy cream to lighten the dish.
  • Adjust Cajun seasoning to taste for milder or spicier results.
  • Leftovers keep well in the fridge for up to 3 days.
  • For extra color, add a pinch of paprika or red pepper flakes.
