- 1 lb boneless skinless chicken breast, sliced thin
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 tsp freshly ground black pepper (adjust to taste)
- ½ tsp ground white pepper (optional)
- ½ tsp paprika
- Salt to taste
- ¼ cup gluten-free tamari
- ½ cup chicken broth
- 1 tsp cornstarch
- 1 tsp sesame oil
- 1 tsp sugar or honey (optional, for balance)
Instructions
- In a small bowl, whisk together tamari, chicken broth, cornstarch, sesame oil, and sugar if using. Set aside.
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add chicken slices and cook 3–4 minutes until just cooked through. Remove and set aside.
- In the same pan, add bell peppers and onion. Stir-fry 2–3 minutes until crisp-tender.
- Add garlic, black pepper, white pepper, paprika, and a pinch of salt. Stir until fragrant.
- Return chicken to the pan and pour in the sauce.
- Cook 2–3 minutes, stirring, until sauce thickens and coats everything evenly.
- Taste and adjust seasoning. Serve hot.
