  • 1½ tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme or rosemary
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 carrots, cut into chunks
  • 45 potatoes, quartered
  • 3 cups beef broth (halal, gluten free)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the chuck roast with salt, pepper, garlic powder, onion powder, and herbs.
  2. Sear the roast on all sides until deeply browned, about 2–3 minutes per side.
  3. Add onion, carrots, and potatoes to the bottom of the crock pot.
  4. Place the seared roast on top of the vegetables.
  5. Pour beef broth over everything.
  6. Cover and cook on LOW for 8 hours until the beef is fork-tender.
  7. Slice or shred the roast and serve warm with vegetables and rich cooking juices.
