- 2 cups cooked chicken, shredded
- ½ cup barbecue sauce
- 1½ cups shredded mozzarella or cheddar cheese
- ¼ cup red onion, thinly sliced
- 2 tbsp chopped fresh cilantro (optional)
- 4 large flour tortillas
- 2 tbsp butter or olive oil
Instructions
- In a bowl, mix shredded chicken with barbecue sauce until well coated.
- Heat a large skillet over medium heat and lightly grease with butter or oil.
- Place one tortilla in the skillet and sprinkle half with cheese.
- Add BBQ chicken mixture, red onion, and cilantro if using.
- Sprinkle more cheese on top and fold tortilla in half.
- Cook 2-3 minutes per side until golden brown and cheese is melted.
- Remove from skillet and repeat with remaining tortillas.
- Slice into wedges and serve warm.
Notes
- Optional cilantro can be omitted if you don’t have it.
- You can substitute with rotisserie chicken for speed.
- Using part-skim cheese can reduce fat.
- Serve with salsa, sour cream, or guacamole for extra dip.
