Description

  • ½ cup cornstarch
  • ½ cup buttermilk (or milk with a squeeze of lemon juice)
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Oil for frying or air frying
  • 12 mini slider buns
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tbsp honey or maple syrup
  • 1 tsp lime juice
  • Optional toppings: lettuce, sliced pickles, or shredded cabbage

Instructions

  1. In a bowl, mix cornstarch, garlic powder, paprika, salt, and pepper. In another bowl, add buttermilk. Dip each chicken piece into the buttermilk, then coat evenly in the cornstarch mixture.
  2. Heat oil in a skillet over medium-high heat. Fry chicken pieces until golden and crispy, about 4–5 minutes per side. Drain on paper towels. (Alternatively, air fry at 375°F for 12–14 minutes, flipping halfway.)
  3. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
  4. Toss the cooked chicken in the bang bang sauce until well coated.
  5. Assemble sliders: place lettuce or cabbage on the bottom bun, add chicken, and top with extra sauce if desired. Add the top bun and secure with a toothpick if serving for parties.

  • For best crisp, avoid overcrowding the pan when frying.
  • Air frying yields a lighter option: 375°F for 12–14 minutes, flipping halfway.
