  • 12 Hawaiian sweet rolls
  • 2 large chicken breasts, cut into slider-sized pieces
  • ½ cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and black pepper to taste
  • Oil for frying or baking
  • 1½ cups shredded lettuce or coleslaw mix
  • Bang Bang Sauce:
  • ½ cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 12 tbsp halal sriracha or chili garlic sauce
  • 1 tsp honey or sugar
  • 1 tsp rice vinegar or lemon juice

Instructions

  1. Preheat oven to 375°F (190°C) if baking, or heat oil in a skillet for frying.
  2. Season chicken with salt, pepper, garlic powder, and paprika.
  3. Dredge chicken in flour, dip in eggs, then coat with panko breadcrumbs.
  4. Fry chicken until golden and cooked through, or bake on a greased tray for 18–20 minutes, flipping halfway.
  5. Mix all Bang Bang sauce ingredients in a bowl until smooth.
  6. Slice Hawaiian rolls in half and lightly toast if desired.
  7. Place crispy chicken on the bottom rolls, drizzle generously with Bang Bang sauce, and top with lettuce or slaw.
  8. Add top rolls, serve warm, and enjoy.

  • For a lighter version, bake the chicken instead of frying and use less oil.
