- 500 g boneless skinless chicken breast, cut into bite-size pieces
- ½ cup cornstarch
- 2 eggs, beaten
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- Olive oil spray
- For the bang bang sauce:
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 1 tbsp honey
- 1 tsp rice vinegar
- For the bowl:
- 2 cups cooked rice
- 1 cup shredded cabbage
- 1 carrot, julienned
- 1 cucumber, sliced
- Optional: sliced green onions or sesame seeds
Instructions
- Preheat oven to 200°C or air fryer to 190°C.
- Season chicken with paprika, garlic powder, salt, and pepper.
- Dip chicken in beaten eggs, then coat in cornstarch.
- Arrange on a lined baking sheet or in the air fryer basket. Lightly spray with olive oil and cook until golden and crispy.
- In a bowl, whisk together mayonnaise, sweet chili sauce, honey, and rice vinegar.
- Toss cooked chicken in the bang bang sauce until well coated.
- Assemble bowls with rice, fresh vegetables, and sauced chicken. Garnish if desired and serve.
Notes
- For crispier chicken, bake longer or cook in the air fryer a few extra minutes until golden and crisp.
- To keep the dish gluten-free, use gluten-free mayonnaise and check that your sweet chili sauce is gluten-free.
- Leftovers can be stored separately: chicken and sauce refrigerated for up to 2 days.
